Ribbons are thin strips of delicate pasta, cut long like spaghetti, It is a traditional variety in the Molise and Piedmont regions of Italy, known locally as tagliolini. It is often served with butter and truffles (tajarin ai tartufi) or sugo d’arrosto, a sauce made from the drippings of roast meat. Ribbons have a short cooking time, and work best with light sauces, fish, delicacies or soups.
