Fatties

We're calling these long, fat noodles Fatties, because we're hooked on 'em. They are better known as pappardelle, the long, flat and broad ribbons of pasta that originated in Toscana (Tuscany). The Tuscany region is known for rich, intense – and generally meaty – sauces. The large surface area and rough texture of this pasta make Fatties the perfect accompaniment to more robust sauces and ragus.
