Snails are little pasta dumplings made from semolina flour. Traditionally called gnocchi, they are perhaps one of the most ancient homemade pastas. Originating in northern Italy, Emilia Romagna in particular, they were made by cutting small pieces from the dough and cooking them in boiling water. Snails can be served with an variety of accompaniments: a simple tomato sauce, meat sauce, cheese and cream, pesto, butter and cheese, or a sauce with game. They can also be sprinkled with plenty of Parmigiano Reggiano and baked au gratin for a few minutes.
